Christmas Potluck Recipe 4

This recipe may be one you want to have in your back pocket and wait to make. Why? Because it is for deviled eggs.

Eggs! What is happening with eggs!?! If you live in a cave or maybe you’re a vegan and don’t know but there is a world-wide egg shortage. They are hard to find in stores and may cost up to $10 a dozen for organic right now!

The Avian flu is the cause. It is predicted to last into the first month or two of this year. I believe the shortage hit right around the time of our party (12/18/22). I don’t think Peggy, who made this recipe, had a problem, but it would have been an issue a week or so later. These devils are darn good, so how about you bookmark this and save it for Easter?

Christmas Potluck Recipe 2

April make this yummy dip. It was a big hit and it is full of protein to keep the party going. The recipe and the photo come from Taste of Home.

Tuscan Sausage & Bean Dip

  • 1 pound bulk hot Italian sausage
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine or chicken broth
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 8-ounces cream cheese, softened
  • 1 package (6 ounces) fresh baby spinach, coarsely chopped
  • 15-ounce can cannellini beans, rinsed and drained
  • 1 cup chopped seeded tomatoes
  • 1 cup shredded part-skim mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • Assorted crackers or toasted French bread baguette slices

2022 Christmas Potluck

I hosted my annual Christmas Appetizer Potluck on Sunday, December 18th. Marissa, Jeff and Max had arrived the afternoon before. I was pretty upfront with my friends/guests that this was as much the annual gathering as it was a “Come Meet Max!” Party.

I took not one photo of the food or beverages that night. In fact, the photo above of Max and Tram is the only photo I took. Poor Max is so tired. He did his best to stay up and meet everyone. Such a sweet little trooper.

Since there are no photos of the food, I’ll be lifting the photos from the websites I found the recipes on. This one is from Inspired by Charm.

In case you don’t recall how my Christmas Potluck works, I send out the invite and when I have a good idea of how many will attend, I send out an email with the selection of recipes to choose from with links to each recipe. It’s a strictly enforced, “first come, first served.” Each guest “replies to all” with the recipe they will be making. This year was a new record – 70% of the guests responded within 4 minutes of that email going out!

Stay tuned in the days to follow, there will be another dozen recipes along with the super fun and festive cocktails I served. And the best part, there are photos of those! Thanks to my girl, Mary, who took some great pics! Thank you, Mary! xoxo

good any time of day

I made this as the starter for Anne’s birthday dinner early this month. I could honestly eat this for breakfast, lunch or dinner on a daily basis. It’s That Good!

Grilled Asparagus Toast with Poached Eggs

  • 4 large slices sourdough bread
  • Olive oil
  • 24 asparagus spears
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground Allepo pepper
  • 1 tablespoon salt
  • 4 large eggs
  • Parmesan cheese
  • Maldon sea salt and freshly ground black pepper

Bring a pan of water to a boil, then reduce water to a simmer. Brush one side of the bread slices with olive oil.

Heat a grill pan over high heat and toast the bread. Move each slice to its own serving plate and drizzle with olive oil.

Snap the woody end off the asparagus, then place it on a plate and coat the spears with olive oil.

Using the same grill pan, grill the asparagus for a few minutes on all sides, sprinkle with the paprika and Allepo pepper, then divide between the pieces of toast.

Tomato Toast!!!

I made this quick and easy appetizer for Sunday dinner with my dad. I only toasted six slices of bread on the grill for our meal. Then I ate this for breakfast, lunch, and dinner for the next several days, using the toaster to toast the bread as needed. Now I miss it and want more. It really is that good!

The recipe calls for Aleppo pepper flakes. Aleppo chili pepper is from the Syrian town of Aleppo near the southern Turkish border. Aleppo pepper has moderate heat with a mild and sweet undertone, a bit of fruitiness, and a hint of saltiness.

Aleppo is a wonderful substitute for the usual crushed red peppers. In fact, I nearly always use Aleppo pepper in place of regular crushed red chilies on pizza, in pasta and salads, on my morning eggs, really all day long. You can find Aleppo pepper online, at specialty stores and I’ve even found it locally at Safeway.

Roasted Tomato Toast

  • 2 – 3 pounds mixed tomatoes *
  • Olive oil
  • Salt and freshly ground black pepper
  • 2 garlic cloves, peeled and finely minced
  • 3/4 cup mayonnaise
  • 1 lemon, washed and dried
  • Baguette, thinly sliced
  • 3 tablespoons toasted sesame seeds
  • 3 tablespoons minced chives
  • Sea salt (I adore Maldon sea salt flakes)
  • Crushed Aleppo pepper

(* Mixed tomatoes are a mix of colors and types such as cherry, Roma, pear, beefsteak, etc)

Preheat the oven to 450 degrees and line a baking sheet with foil.

Cut large tomatoes into cubes, slice larger cherry tomatoes in half and leave small cherry or pear tomatoes whole. Place tomatoes on the prepared baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to combine. Roast for 30 to 40 minutes or until the smaller whole tomatoes burst. Remove from oven and set aside.

Use a Microplane or small grater to remove the zest from the lemon over a small bowl. Cover the bowl with plastic wrap and set it aside. Cut the lemon in half and set it aside.

While the tomatoes are roasting, in a small bowl, mix the garlic and mayonnaise together.  Squeeze in 1 tablespoon of lemon juice, and stir to combine. Season with salt and pepper. Cover and refrigerate. Keep that lemon handy, you may want to add more juice later.

Either toast the baguette slices in a toaster or toaster oven or heat the grill and toast.

Trader Joe’s quick app

In the span of seven days, I had people, mostly family, over for appetizers or dinner on four separate occasions. If it’s not the same people each time, I tend to repeat at least one or two of the dishes, over and over.

This time around, one of the easy appetizers I put out was a mix of two of my favorite frozen items from Trader Joe’s.

I like TJ’s frozen Creamy Spinach & Artichoke Dip and I love their frozen Mexican-Style Roasted Corn with Cotija Cheese.

I thought that they would be great mixed together and served warm with chips. I was correct!

First cook the corn according to the package directions. It has yummy frozen sauce chunks just as their risotto and some of their other frozen products do … yummy!

Next, microwave the spinach-artichoke dip according to the package directions, then add as much corn as you would like. I added about 1 cup of corn.

almost too pretty to eat

On Friday night we had a little reunion of sorts. Our dear friends and former neighbors, Lori and Jonathon, were in town for the week.

In December, Tram and I flew to Chicago to visit them and do a bit of Christmas shopping. We had an absolute ball! I meant to blog about our trip but I never got around to it, you know, with the holiday rush and all.

Tram and Steve and Lori and Jonathon came over for dinner and we had the very best time! I’ll be posting recipes all week; appetizers, cocktails, starters, salads, and even a salt block cooking recipe. I’m going, to begin with a gorgeous smoked salmon appetizer. It’s hard to take that first chunk out of it because it’s so beautiful, but once you get going on it, it’s hard to stop. It’s as delicious as it is lovely.

There is no cooking involved and you’ll be using a food processor to put it together. As such, I’ll be tagging this one as an Easy-Breezy Recipe.

Once you add the herbs, you want to use the Pulse button ONLY. You don’t want the mixture to turn green from the herbs or the processor to turn the salmon and cranberries into baby food. What you’re going for is a cohesive mixture with a bit of texture.

Fresh Fruit – Smoked Salmon Spread

  • 4-ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1 teaspoon each; fresh minced dill, mint, and thyme
  • 24-ounce package of smoked salmon
  • 1/2 cup crushed pineapple, drained
  • 1/3 cup dried cranberries
  • 1/2 cup chopped dry roasted almonds
  • Fresh sliced peaches, blackberries, raspberries, blueberries, and fresh sprigs of thyme, basil, dill, and/or mint for garnish
  • Crackers for serving

Place the cream cheese in the bowl of a food processor and blend; add the mayonnaise and salt and blend until smooth.

Mini Spinach Flower Tarts

I brought these pretty and tasty little morsels to a family Christmas party on Saturday night. I made a double batch so that I’d have them in my freezer for the rest of the holiday season, ready to pull out on a moments notice.

They were made of necessity, not only the need to bring something to a party but also the urgency to use over 2 pounds of fresh spinach that I reluctantly had in my refrigerator.

Later in the week, I’ll share a Salmon and Spinach recipe that called for 2 pounds of fresh spinach. The recipe was from my day at Ballymaloe Cookery School in Ireland and I was sharing it with the students in my cooking class at Les Gourmettes Cooking School here in Phoenix.

Anyhow, I was doubling the Salmon recipe to feed sixteen – so according to the recipe, I’d need 4 pounds of spinach. That’s A LOT of spinach. While shopping for the class at Costco, I realized that would have been 4 boxes of Costco baby spinach. I had not realized that each box was 1 pound until I looked, so I cut back and only bought 3 boxes. Well, I didn’t cut back enough! In the end, I did not even use 1 full box of spinach (1 pound) to make the double recipe for the cooking class.

That’s way too much leftover spinach, so this recipe was born out of the wish to not waste food.  If you would rather substitute frozen chopped spinach for the recipe, rest assured, that is perfectly fine. A 10-oz package of frozen spinach is almost the same as 1 pound of fresh spinach, once the spinach is cooked.

If you want to be extra smart, like me, make a double batch and freeze it for your later entertaining needs.

To Freeze: Place the unbaked filled muffin tins in the freezer for at least 3 hours. Once frozen solid, use the tip of a paring knife to pop each mini tart out and place it in a freezer quality zip-lock bag. Write on the bag, not only what they are, but also the date and baking directions (Bake at 400 degrees for 25 minutes.)

I did a test to see if it was best to bake the frozen tarts in or out of the muffin tins. The good news – is you may bake them on a baking sheet, no need to dig out the muffin tins again. In the photo above – the top two were baked on a sheet pan and the bottom two were placed back in the mini muffin tin and baked. Fantastic, they hold their shape!

One more thing…

Did you know that Trader Joe’s carries puff pastry during the holiday season? Yes, they do and it’s better than the Pepperidge Farm brand that you buy at the grocery store.

PF vs TJ

It actually has real butter in it… unlike that other brand (which is still pretty good stuff) that uses only shortening. Additionally, the TJ’s puff pastry sheets are rolled, whereas the PF sheets are folded in thirds. The rolled sheets are MUCH easier to work with.

I buy not only what I’ll use in December and January but at least another 8 packages to have for the rest of the year. Super Smart!
