Marissa made dinner last night! It was wonderful, and so was the food! To have someone cook for me is pure heaven, and she is turning into a very good cook, so that makes it extra special. Marissa found a recipe on allrecipes.com for something I probably would never have made, a melon soup. I was a bit skeptical, but I didn’t tell her that, and I’m so glad I held my tongue because it was a delightful surprise.  She also made a delicious Guacamumus (avocado hummus) she found online. I will link you to it here on my site, once she gets it posted on her blog…

The original soup recipe is called for Chinese winter melon (dong gua). She could not find that, so she used honeydew instead, it worked perfectly. Also, she added 1 cup of Panko after discovering that the meat mixture was too watery. Finally, I advised her to bake the meatballs first, to brown and flavor them more, and that also worked just right.  Even if this doesn’t seem like the sort of thing your family would like, give it a try, and thank us later!  Plus this seems like the perfect soup to make vegetarian, just substitute tofu for the pork.

addiction

Addiction is a serious subject, and I am not here to make fun of it. That said, the reason there was no post yesterday is two-fold. The first reason has to do with Christmas. It is Christmas’ fault, or the fault of my family’s expectations of what Christmas looks like, that I didn’t have time to post yesterday. It takes FOREVER to decorate this house! And I’m not even half done yet.

The other reason has nothing to do with the “most wonderful time of the year” and everything to do with my newest addiction… My Vineyard, on Facebook. I am here to confess… “My name is Linda, and I am a My Vineyard junkie.”  Your response should be, “Hi, Linda. Do you want me to “friend you” on My Vineyard so that we can play together?”  Then I say, “Oh yes, please do and in return, I promise to send you gifts, and travel to your vineyard every single day where I shall help build your houses, fertilize your vines, and taste your wine!”

OK, now that the business portion of the post is out of the way, on to the recipe of the day. These are a lovely little appetizer to serve to your friends (Facebook, or not!) and family this holiday season. And that is exactly what I shall be doing at tonight’s final cooking class of my fall series at Les Gourmettes, and then again to my lovely neighbors at our Holiday Progressive Dinner on Friday night when appetizers begin at our house. (The main reason I HAVE to finish decorating this house and stop playing that cursed game!)

For convenience, I call for purchased fully cooked short ribs, which I found at Costco and have seen at Trader Joe’s. Feel free to make the short ribs from scratch if you have the time.

Pen & Fork

This is exactly what happened – I mean exactly!  I was trying to decide what to do with 2 acorn squash that was a part of that Thanksgiving centerpiece I made. I successfully used the 3 sugar pumpkins last week, but the squash remains. I knew they would be the recipe for today’s post, but exactly what to do with them that would be new and exciting, I had no clue. Acorn squash and exciting don’t really belong in the same sentence… or so I thought!

As usual, I procrastinated and instead went on Facebook to waste time, I mean find inspiration. And inspiration is precisely what I found; in the form of Gwen Ashley Walters! Gwen posted an update on her page linking to her blog.. and what was she making? Acorn Squash! Not just any old squash, but a gorgeous lentil stuffed acorn squash.

winter salad

Here is the salad I made at the Valley Dish show yesterday. I created it especially for Tram after I was on the last time and made crisp mozzarella slices to go with a risotto dish. She’d mentioned that she loved the crisp warm cheese and I asked if she’d had warm goat cheese done the same way. She said that she had and would love to learn how to make it, this is how this salad came to be. I’m sure most of you have had something similar while dining out.  It is easy and delicious to re-create at home. Eliminate the shredded chicken to make a lovely vegetarian main-course salad. Here is THE LINK to the intro for the segment I was on, the salad and pudding making are not up, so this is just a bit of a tease.

Tip: One of the best tips around; use dental floss to slice the goat cheese. It makes a perfectly clean cut, something a knife just can not do!

Measure twice, cut once

You know that saying, right? It means you measure any wood you are working with twice to make absolutely sure that your measurement is correct because you only get one chance to cut it right. That is how I feel about greasing a pan when baking. I am not a huge fan of baking or making desserts. Too many things can go wrong, at least for me they seem to.

So the one thing I try to get right is to get the dessert out of the pan in one piece.  Easier than it sounds unless you use parchment paper. Whenever I make a cake or quick bread, I always (even when I forget to put it down on a recipe) grease the pan, line the bottom of the pan with parchment, and then grease the parchment. Works every time, as you’ll see in the pictures below.

packing up Thanksgiving, bringing out the Christmas

For 22 years we have adhered to a strict rule in our house at this time of year. No holiday decorations are allowed on December 1st. That means Thanksgiving stuff needs to be taken down and put away and the Christmas stuff must be left unbothered until at least December 2nd. Hey, that’s today! The reason for the rule is simple – December 1st is Marissa’s birthday and that day needs to be all about her – not about the two major holidays that surround her special day.  Over the years, the rule has been slightly modified, and Christmas lights on the outside of the house became permitted. And this year, the rule wasn’t so much modified as actually broken – just a little! I have a TV shoot here this morning and it is going to feature me and my kitchen Christmas tree. Hence, the rule was broken when I put up that little tree yesterday – sorry baby girl, we’ll go back to being rule sticklers next year!

prime time – Happy Birthday sweet girl!

Did you know that 23 is a prime number, meaning that it is a natural number that has exactly two distinct natural number divisors: 1 and itself?  

There are 25 prime numbers between 1 and 100. They are: 2, 3, 5, 7, 11, 13, 17, 19, 23, 29, 31, 37, 41, 43, 47, 53, 59, 61, 67, 71, 73, 79, 83, 89 and 97. And strangely enough, the current ages of three out of the four people in our family are prime – weird! Dave is 53, Connor is 19, and… TODAY, Marissa is 23!
