phase 2 and taco time
Today is Phase 2 of Marissa moving away from me! Don’t get me wrong, I am so happy for her, so thrilled for this new and exciting chapter in her life! This is what you wish for; for your children to be independent, on their own, living their lives, chasing their dreams! But I’m going to miss her! She is a perfect daughter and a gorgeous, caring, smart, and amazing woman and I am proud. I shall be putting her on a plane to San Francisco today at 3:30. When she arrives there, she has a place to stay for the next three nights, and then… not 100% sure. On Sunday she has an appointment to go see an apartment that hopefully (more like praying to God!) she will be able to sublease, beginning on the forth day. If that doesn’t go through, oh I can’t even begin to think about that! And on Monday morning, she starts her new job.
When I get home from the airport I think I’ll just get on the internet and start planning my trip to visit her, to see her in her new wonderful home by the bay. Either that or sit down and have a good cry! Honestly, I am so excited. I am so very proud. And mostly, I am exceedingly blessed! Blessed and honored to be her mom. Marissa, I love you!
I promised you a recipe today and a great recipe you shall get … not only am I a proud mom, I am also a carnivore. I am not a vegetarian, vegan, raw vegan, or any other such noble person. I am more of a Big Night, Like Water For Chocolate, Babette’s Feast, or Mostly Martha sort of movie girl rather than a Food, Inc., Fast Food Nation, Forks Over Knives, or Earthlings movie girl. I like to live with my head buried deeply in the carnivore sand.
That said, I don’t think I’ll ever make beef, chicken, or pork taco again! Obviously, not because I have anything against beef, chicken, or pork… but because these red lentil tacos are so much better. Really they are! If you make them and you don’t agree, I’ll give you your money back. Honestly, every penny you’ve ever spent coming to my free blog, I shall refund to you, in full, if you don’t think these are the best tacos ever!!! Now that’s a money-back guarantee if ever there was one. xoxo

chillaxin
If you’re feeling that it’s too hot to turn on the stove or even worse, the oven, then it’s time for summer rolls; also known as Vietnamese salad rolls or spring rolls.
Now, due to my lack of time to explain it myself, (I have the teen class graduation lunch today, hosting not only the students themselves but additionally two guests for each student) I turn to trusty Wikipedia to define spring or summer rolls.
“Vietnamese spring roll – ingredients include slivers of boiled or fried pork, shrimp, chicken, beef, fresh herbs, lettuce, sometimes fresh garlic chives, rice vermicelli, or bean threads, all wrapped in moistened rice paper, served cold with dipping sauce. The salad roll is easily distinguished from a “minced pork roll” by the fact that it is not fried, the ingredients used are different. Spring roll refers to the freshness of the spring season with all the fresh ingredients, therefore frying would take away that feeling.”

walking and cooking
Tomorrow is going to be a busy day for yours truly. First off, my sister and niece, Sloane and Raina, along with Marissa and I, are going to get up at the crack of dawn and drive to Tempe to participate in Pat’s Run. Pat’s Run honors American Hero, Pat Tillman and benefits The Pat Tillman Foundation which raises funds benefiting Tillman Military Scholars. If you don’t already know Pat Tillman’s story, you really need to learn about him!
After the run, (in all honesty, we are walking, but walking fast!) Marissa and I will race home, pack up, and get ourselves to Berridge Nurseries on Camelback and 46th Streets for the Art in the Garden event that I will be cooking at, beginning at noon. This is the recipe I’ll be making, I realize it may look a bit intimidating with 25+ ingredients, but the majority of those are vegetables, herbs, and olive oil, so give it a whirl. I hope you’ll stop by the event and say “hello”.

Meatless Monday #1
I’m going to try to post a “Meatless Monday” meal every week. I honestly don’t know how long I’ll keep it up, but I’m going to give it my best shot. The problem with posting on Monday is that if the recipe sounds like something you really would like to try for dinner that night, it doesn’t give you much time to get to the store and get the ingredients. So I plan to post “MM” recipes over the weekend.
Besides the Boca burgers I use to buy for Marissa during her vegetarian days, I’ve never purchased or cooked with meat replacements before, but the more I hear about them, the more I’ve been wanting to give them a chance. Vegan activist and author, Kathy Freston, has been a frequent guest on both Oprah and Ellen and she swears by the Gardein and Morningstar Farms brands, so that is what I am going to start with.
I purchased a half-dozen different packages and decided to play it safe for this first go-round and make chili since if we didn’t care for the “fake” meat taste, the bold and spicy flavors of chili would easily cover it up!

a little something for everyone

But before we get to it, I want to provide you with a head’s up about tomorrow’s recipe. Just in time for St. Patrick’s Day – the most amazing Irish Soda Bread recipe. It comes directly from the source, a true Irishwoman who also happens to be a great friend of this blog. None other than, Sharon Cereska; loyal follower, mother to long-time students of Les Petites Gourmettes, and one of the two winners of our latest contest. Sharon generously brought me a loaf of the delicious bread as a thank you when she came to my cooking class at Les Gourmettes (the prize of the said contest). Marissa and I devoured the entire loaf before Dave even knew it was in the house! Besides the usual flour and such, you’ll need 1 egg and 1 3/4 cups buttermilk. Get to the store and pick those up so you can make the bread. Trust me, you’ll be thanking me, and especially, Sharon, later!

all around star
This lovely spring or summertime tart is perfect as an appetizer, placed atop lightly dressed greens for a salad, or as a side dish for fish, poultry, pork, or beef. Basically, it’s good anytime and anywhere! I created it while trying to use up things I had in my fridge (what’s new?) including the zucchini, caramelized onions, and blue cheese. I always have Parmesan and puff pastry on hand, so this was a no-brainer. Feel free to add in whatever you have on hand as well; such as sun-dried tomatoes, capers, olives, or tapenade… the possibilities are endless. If you’re not the huge fan of blue cheese, that I am, substitute in another good melting cheese… say Fontina, or just use more Parmesan. Just get in that kitchen and create!

more asparagus
I failed to mention while posting the asparagus soup a couple of days ago, that the main reason Sharon asked for the recipe was that asparagus is a smoking deal at Bashas’ grocery stores this week. Gorgeous pencil-thin bunches for .99 a pound! You only have today and tomorrow to run out and pick it up before the sale ends… hurry – grab your keys and leave now – get it before it’s gone! And in case you are like me, and can’t let a good deal pass you by and you pick up a couple more pounds than needed for the soup… here’s another healthy recipe using asparagus.

Gâteau
A gâteau (pronounced ga-toe) is a French cake, often specifically a sponge cake. 1. a rich or fancy cake. 2. food baked or served in the form of a cake.
After my Wednesday appearance on Valley Dish, I had a stack of about 30 herb crêpes left over. Crêpes freeze very well, so a dozen were wrapped, labeled, and frozen for future use. Fortunately, I had seen this, just the Sunday before, on my favorite daily shopping website; One Kings Lane:
This savory cake is a work of genius. It is 6 inches in diameter and features a seemingly endless stack of delicate crepes, each layered with classic flavors – aged Gruyere cheese, tender onion, and spinach. This is rich, soul-satisfying fare, with an absolutely stunning presentation. $65 Retail; One Kings Lane price $45
That inspired me to make my own version with the addition of luscious duxelles. (Duxelles is a finely chopped mixture of mushrooms, shallots, and garlic sautéed in butter and reduced to a thick mixture with cream. Often used as a stuffing; notably, beef Wellington, or as a garnish.)
An alternative smoked salmon gâteau (much quicker and easier) is at the bottom of the post. Either version makes a perfect light dinner, lunch, or brunch dish.

veggie delight
We enjoyed Gwen’s lentil stuffed acorn squash so much last week, that I decided to take another spin at it, with quinoa, this time. Especially since I STILL had more squash from that darn Thanksgiving centerpiece to get rid of. Not that I’m really complaining, but those things take up more than their fair share of room in the refrigerator.
