rocket & sweet chili chèvre
In yesterday’s comments, Vicki asked for more recipes using the new Sweet Chili Chèvre from Trader Joe’s that I was touting.

Rocket, Roasted Zucchini, Fennel, Chèvre, and Marcona Almond Salad
Simple Balsamic Vinaigrette
2 tablespoons balsamic vinegar
Salt and freshly ground black pepper, to taste
1/3 cup olive oil
Salad
2 large zucchini, cut into 1-inch rounds on the diagonal
1 cup cherry tomatoes, cut in half
Olive oil
Salt and freshly ground black pepper
4 cups rocket (wild arugula)
1 fennel bulb, core removed and thinly sliced
1/2 cup sweet chili chèvre, crumbled
1/3 cup Marcona almonds
Vinaigrette: Whisk the vinegar in a bowl with the salt and pepper until the salt dissolves. then whisk in the oil until combined. Taste, adjust seasonings, and set aside.
Salad: Preheat oven to 400 degrees. Place zucchini rounds and tomato halves on a baking sheet and drizzle with oil (I used red pepper flavored oil) and season with salt and pepper. Toss to coat. Bake for 20 minutes or until zucchini is soft and lightly browned. Remove and cool slightly.
Mound the rocket on 4 dinner plates, and top with zucchini, tomatoes, fennel slices, crumbled chèvre, and almonds. Drizzle with balsamic vinaigrette and serve.
