lunch imitating art
More than 2 1/2 years ago I made a bold confession to you – I love Campbell’s Tomato Soup more than homemade tomato soup. Just imagine my joy and excitement when I saw on Facebook that, for a very limited time, Target was carrying Andy Warhol-inspired Campbell’s Tomato Soup cans.
I LOVE those cans, the original art which you can check out HERE, and the cans sold at Target. I drove from store to store to store to find all four colors of the cans. Below you can see what I was able to round up.
Warhol created his first Campbell’s art in 1962. It consisted of 32 separate canvases of 32 different Campbell’s soup varieties.
The “extreme” colored cans didn’t come around until 1965. Warhol claimed to have eaten Campbell’s soup for lunch, nearly daily, for 20 years.
No, I’m not going to give you the “recipe” for making Campbell’s Tomato Soup, you’ll find that on the back of the can (I use milk – not water) … how about a grilled cheese sandwich to accompany your soup?
Done!
Three-Cheese Grilled Cheese with Bacon and Roasted Tomatoes
Melted butter
2 slices bread of your choice
2 thin slices Fontina cheese
2 thin slices provolone cheese
2 slices crisp cooked bacon, broken in half
3 thick slices fresh mozzarella cheese
Roasted heirloom tomato slices
Brush melted butter on one side of each slice of bread. Place bread, buttered side down, on a work surface. Place the Fontina and provolone slices on one slice of bread and top with bacon. Place the mozzarella slices on the other slice of bread, and top with roasted tomato slices.
Press the two sides together and grill in a hot skillet or grill pan until the bread is brown and crisp and the cheese is melting.
Cut in half, on the diagonal, and serve with a hot and tasty bowl of Campbell’s Tomato Soup.
Enjoy!

I just love love grilled cheese and Campbell’s tomato soup! I add lots of spices and powders to mine, and milk – milk all the way. This grilled cheese is so perfect to elevate the soup. Thanks for all of your great recipes and Happy 5th Blogiversary!
