Friday cocktail

Seriously, why am I not posting a cocktail recipe every Friday?!? While we’re all staying home, classic cocktails with new names, like the Quarentini are popping up all over the place.

This cocktail is my spin on the classic Zombie, tweaked and swirled to become a Zoombie. If you’re not on the phone with friends and family in FaceTime, you’re on your computer with friends and family in Zoom. Zoom Happy Hours have been the thing to do for weeks now. So please feel free to forward this recipe to your friends so that y’all can mix up a batch in your own kitchens and enjoy it together.

I enjoyed the Zoombie earlier this week with two dear friends who came by for a much-needed Social Distancing Happy Hour. By the way, the appetizer you see in the photos above is Zucchini Crostini. It is always a hit!

Zoombie Cocktail

Cocktail

  • 2 ounces fresh-squeezed grapefruit juice
  • 2 ounces fresh-squeezed orange or blood orange juice
  • 1 ounce dark rum
  • 1 ½ ounces light rum
  • 1 ounce pineapple juice
  • 1 ounce mango juice
  • 1/2 ounce fresh-squeezed lime juice
  • Simple syrup, optional (taste and add if needed)

Garnish

  • Sprig of mint and seasonal fruits

Pour all the cocktail ingredients into a cocktail shaker and fill with ice. Shake well.

Fill a glass with ice and strain the cocktail into the glass.

Place the seasonal fruits on a skewer and garnish the cocktail with the fruit skewer and a sprig of mint. Enjoy

Serves 1

To make a batch, simply double, triple, or x10 the recipe. Mix in a large pitcher and refrigerate for at least 2 hours. No need to shake in a cocktail shaker. Simply pour into ice-filled glasses and enjoy.
