Saturday night’s alright

(Disclaimer: So I’ve already had a few people (whom I dearly love!) call or email to advise that I do not know how to spell all right... I do indeed know how to spell it correctly, but I’m going with the thought I had when I wrote the title for this post -which was Elton John’s hit, “Saturday Night’s Alright For Fighting” … and if Elton spells it that way – it’s just fine and more than alright with me!)

After a long day of company picnicking, errands, and cleaning – a quick dinner was in order for Saturday night. I’ve used pomegranate molasses several times before, so just click on that ingredient and it will take you to the easy recipe. Pom molasses is a valuable ingredient to have on hand. It gives a great big punch to everything from chicken, lamb, beef, and fish to your run of the mill – ho-hum vegetable dishes.

invention

I’m often asked, “How exactly do you come up with new recipes?”  Well, sometimes, it comes from inspiration; such as beautiful fresh produce at the farmer’s market, a new product at Trader Joe’s, or even a great sale on a favorite cut of meat at the supermarket. Other times, it is the result of the rule, “Necessity is the mother of invention.” That is the case today. Here is a word-for-word text I just received from my husband of nearly 25 years, (May 4th), David. “I forgot I was supposed to bring some kind of side dish to the (company) picnic today 🙂 if you have something you could easily throw together…” This is from a man married for, just weeks away from 25 years, yet it sounds more like something that would come out of your 4th-grade child who forgot he had a project due the next day!

If you’re a married woman with children, you are thinking, “Yup, no surprise, been there- done that.” If you’re a man, you are most likely thinking, “What is the big deal, obviously the woman knows how to cook.”  Whatever! Of course, I do “have something” and I can “easily throw it together”. After all, Dave does know what our refrigerator looks like at any given minute. So here is how the side dishes for today’s picnic got thrown together.

poached + fried = delicious

While our family was in Italy during the summer of 2008, I had Asparagus with Prosciutto di Parma, Parmegiano Reggiano, and Poached Eggs. The dish is a common sight on Italian menus.

I’ve taken quite a few liberties, basically Americanizing and bastardizing it at the same time! The inspiration to do so came after a cooking class on Monday night with Chef Chris Curtiss of Noca, who made these outstanding fried poached eggs and served them on top of a fabulous salad with pickled red onions, bacon, and red wine vinaigrette – truly amazing!

I often serve the asparagus as a side dish and it has already been featured on this site, but this is a wonderful light, refreshing, and satisfying main dish for any night of the week. Of course, it would also make a great brunch dish.

forgiveness

For the past year, I’ve been providing 2 dozen cookies a month to the winner of an auction item I donated to a local charity.  This is my last delivery of the year and these cookies are real winners.  I have a thing for malted milk balls, Whoppers, as it were. They have long been one of my all-time favorite candies. I’m sure my mistreated baby sister, Sloane, could tell some awful stories about my mean-younger self, involving Whoppers… I’ll just leave it at that. I dearly love you, Sloane and I am truly sorry for that very mean big sister whom you had to put up with, when we shared a bedroom, all those years ago… please forgive me! xoxo

Happy Birthday

…40 days later…

raffle payoff time…

L & L

You may remember a post back in September about a raffle that, my friend and former private student, Larry Fitzgerald, and I were doing for a charity event.

The winner, Bill Nassikas, was announced on October 1, 2009, and last night we finally held the cooking and dining event.  Bill’s guest was Beau MacMillan, chef at Elements at the Sanctuary Camelback Mountain Resort and Spa, which received a rave review in yesterday’s Arizona Republic.

Bill is the President & COO of Westroc, owners of Sanctuary, so there is that connection, and congratulations to you both!  We had a great night cooking together and then sitting down to enjoy the fruits of our labor. carpeting not cooking

No recipe today… the reason… my house should be deemed a national disaster area! I am hoping for some catastrophe funds from the government to be flowing my way very soon!

Every day since Easter, I have boxed up, thrown out, or donated car-loads of goods. Our house is 24+ years old and we have lived in it for 11 of those years and until today, the original carpet was on its floors.  But although the picture above looks nice, with the new fresh carpet, the rest of the house… not so much!

Although I would never categorize myself as a hoarder, I will have to admit that I am a pack rat. I find myself continually cramming all those things, that I can not bring myself to part with, into every nick and cranny of the house.

To clean it out, I began with the upstairs carpeted rooms; a huge playroom, Connor’s bedroom, and an office. The office was easy, it has a built-in desk and bookcases all the way around the room, and although those are packed to the gills, nothing had to be gone through in that room. Connor’s bedroom was another story, he has inherited my tendencies and doesn’t want to throw out anything, not even birthday cards received from family and friends for his 3rd birthday, which of course he can’t even remember receiving! Sorry, Connor, when you went back to school after Easter, some of those things ended up residing in the recycle center.

The playroom – I can barely talk about the playroom! Before Marissa went back to Tucson on Easter Sunday, she helped me go through three cabinets full of games, videos, and arts & crafts stuff. Almost an entire carload of that went to Goodwill. Everything else that was in those upstairs rooms went into Marissa’s wood-floored room. See the pictures of that sad scene below – I don’t know when I’ll find the strength or courage to open that door again and face it.

not pretty but pretty darn yummy!

On Saturday, I was at the Downtown Phoenix Public Market conducting a class for kids at the market. The class came about when I was contacted by a group of ASU students who are in a program planning class. Their assignment was to put on a community event, and they chose to teach kids about the importance of locally grown foods and organize a cooking class. They were so well organized and put together a great event. I want to extend a big congratulations to each of them; KC, Megan, Britany, Daniel, Ryan, Mary, and Jessi.

Plus KC made the most adorable visual aid for her presentation, I just had to include it here!

And the kids who participated were so attentive and excited to participate. Sadly, I didn’t get all of their names committed to memory; but to all of you, including Matthew, Ava, Brenden, Leanna, and Bekah – thanks for coming, and keep on cooking!

We made a roasted vegetable dish and a berry smoothie. Since we didn’t have access to an oven, I roasted a batch of the vegetables ahead of time. At the market, the kids sliced and prepared a second batch of the veggies, and I brought those home to roast and used them to create this soup. When the vegetables are pureed, they go from all their various lovely colors to a drab old brown. Not very appealing in color – but they taste – fantastic! It helped to hold back a few bits of the veggies to dice as garnish and my finished soup would have even been a little brighter if I had remembered to garnish with some cilantro, so be sure and remember for yourself!  The brioche croutons are a wonderful added flavor – and on their own – they are downright addictive.

dine and dash
