While I may be on the road in a U-Haul, towing a VW beetle behind, I still want to share with you some more of the fig recipes I created to use up the harvest from my tree.  The figs for this recipe and another one coming up tomorrow were all that I had left after I fought off the birds to get the last few.  While I was out picking, there was this one little finch who was mighty angry that I was stealing his figs.  I’m serious, he was acting like he planted, waters, and pruned the darn tree… and I was stealing from him! The nerve!  OK, honestly I don’t prune the tree, my yard man, Tony, does.  But hey, I am the one who pays Tony, so take that you selfish (and pretty darn cute) little bird!

pool time

Today and tomorrow feature more recipes from the weekend with Marissa’s friends visiting from Tucson. When they arrived late on Friday afternoon, they promptly hit the pool to cool off and play volleyball and basketball.  There were also some wicked ping pong matches happening under the patio. I took a dozen pictures of the guys doing the “jump shots” at one end of the pool… showing off for the ladies and for each other. In every single photo, you can see the guys (John, Will, and Chris above – not pictured: Albert, Kevin, and Shoaib) totally enthralled with their moves – while the girls, (Paige, Astrid, and Marissa) at the other end of the pool, are completely oblivious of them… cracks me up!

There are two ingredients here that you may or may not be familiar with. If you’re not sure what either Nduja or piquillo peppers are, just click on their name and a link will take you to a previous post all about them. With all the young men to feed, I, of course, doubled the recipe.

from a sandwich to pasta

Today at 5:00 PM, I will draw a name from a hat for a winner from all the comments given on Tuesday’s post – my own Ode to Trader Joe’s –  and that winner will be announced on tomorrow’s post. I’m using up the last of those Trader Joe ingredients, left from the sandwich, for this pasta. I spent $20.58 last Sunday (weekend shopping – yuck!) and made 3 full meals for a total of 14 servings. Even if you add in the few things I already had on hand; a couple of tablespoons olive oil, 1/2 cup white wine, parmesan, spaghetti…  that still comes to less than $2 per serving! Plus, all three dishes fit into the “Easy-Breezy” category – that cannot be beaten!

“birthday week” continues…

Today is my gorgeous girlfriend, Jen’s, birthday. I cannot begin to express how much I love this amazing woman; she is my rock, my soul-mate sister, my “on-demand” comedian, and my friend.  She can make me laugh like nobody’s business! She is there through thick and thin and is a loving friend, mother, wife, sister, aunt, and daughter. Whenever I have something to share, complain about, need help, advice, or just want to chat, Jen is the first person I call.

The one really awful thing about Jennifer? She lives 1,400 miles from me (as the crow flies). Happy birthday, Jenny Jen, I forgive you for that one awful thing and love you unconditionally!

For the rest of the week, I will highlight and share recipes from Jen, who is coincidentally, a great cook, or recipes of mine that are favorites of hers. Today’s recipe is a fun and quite a rich appetizer pizza that is perfect for upcoming holiday parties.

Arizona Cardinals and buffalo mozzarella

It’s Football Season! Today is opening day and our Arizona Cardinals are at home vs. San Francisco. All I can say is, “GO CARDS!!!” Here are three quick and simple hors d’œuvres using buffalo mozzarella. Cow’s milk fresh mozzarella balls may be substituted. The Stacks can be served hot, cold, or at room temperature. If serving cold or at room temperature, use Belgium endive spears to serve the stacks on. If heating, the stacks will be placed on toasted baguette slices. An important thing to pay attention to when preparing this recipe is to try to buy zucchini and eggplant that are similar in size when cut into rounds. Instead of cutting a large ball of mozzarella, bocconcini (tiny little mozzarella balls) may be used. You’ll notice that the baguette, eggplant, and zucchini are all sliced on a diagonal. This gives you a much large piece and better shape to work with, rather than cutting straight down into rounds.

The Prosciutto Picks couldn’t be easier or more convenient. They also may be served cold or at room temperature. Finally, the Meatballs are simply delicious! I like to roll half of the Parmesan cheese before baking and leave half plain, it makes for a more interesting presentation on the platter. You may dollop with purchased Marinara or with the same yummy tomato-pesto sauce used on the Parmesan Chicken recipe from the September 9 post from a couple of days ago.
