You didn’t think I’d do a week of “Stone Fruit” recipes without making a pie, a crisp, or a crumble – did you?
Of course, you didn’t!
This is one of the easiest and tastiest desserts around … a stone fruit crumble. Enjoy!
Stone Fruit Crumble
Filling
3 1/2 to 4 cups roughly chopped fresh stone fruit
(I used 1 peach, 2 plums, 2 apricots, and one dozen cherries,
all pitted, then chopped)
2 tablespoons flour
1 tablespoon fresh lemon juice
Crumble
3/4 cup flour
3/4 cup sugar
3/4 cup old-fashion rolled oats (not instant)
5 tablespoons unsalted butter, melted
Topping
Dollop or scoop of vanilla yogurt or ice cream
Preheat oven to 350 degrees.
Filling: Mix together the fruit, 2 tablespoons flour, and lemon juice. Toss to combine.
Place fruit mixture into a pie pan or an 8 x 8-inch baking dish.
Crumble: Combine the 3/4 cup flour, sugar, and oats in a medium bowl.
Mix in the melted butter.
Sprinkle the crumble mixture over the fruit.
Bake for 45 minutes, or until the top is golden brown and the fruit filling is bubbling. Allow to cool slightly before serving.
Serve with a dollop of vanilla yogurt or a scoop of vanilla ice cream.
