soup for my dad
When I was cleaning my dad’s house last week, I came across a large envelope with a dozen copies of a page from a cookbook.
One of the recipes on the page was outlined. I decided to take a copy and make the soup for him for our Sunday supper.
Dad’s Minestrone Soup
1 pound ground sweet Italian sausage
1 red onion, peeled and chopped
2 garlic cloves, peeled and minced
1 cup peeled and chopped carrots
1/4 cup minced fresh basil
2 zucchini, trimmed and cut into quarters lengthwise, then sliced
32-ounce can diced tomatoes, undrained
4 cups beef broth
2 cups finely shredded cabbage
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cans great northern beans, undrained
Shredded Parmesan cheese, garnish
Cook the sausage in a large pot until browned. Add the onion, garlic, carrots, and basil, and cook for 5 minutes.
Add zucchini, tomatoes with their liquid, beef broth, cabbage, salt, and pepper. Bring to a boil, reduce heat, and simmer, covered, for 30 minutes.
Add beans with their liquid, and cook for an additional 20 minutes.
Ladle into soup bowls and garnish with Parmesan cheese.
Serves 8

Hey, that sound good . It has ingredients that I use & recognize, whereas some of the things tou use are not familiar to me & I don’t have a Trader Joe’s near me.
I too don’t have a Trader Joe’s in my neck of the woods…lol All the ingredients you use are familiar to me…Some people just need to use a cookbook!
