If not, I’m sorry for you but it will still taste fantastic without the “fancy” vegetables.

Spinach and Mixed Greens Summer Salad with Lemon-Dill Vinaigrette
Vinaigrette
6 tablespoons olive oil
1/4 cup fresh squeezed lemon juice
1/4 cup chopped dill
Kosher salt and freshly ground black pepper
Salad
8 cups baby spinach
8 cups mixed salad greens
2 English cucumbers; peeled, halved lengthwise, seeded, and thinly sliced
3 cups heirloom cherry tomatoes, halves or quartered, depending on size
2 bunches Easter egg radishes, trimmed and thinly sliced
1 bunch green onions, thinly sliced
Vinaigrette: In a large bowl, whisk the olive oil with the lemon juice and dill and season with salt and pepper.
Salad: Add the spinach, mixed greens, cucumber, tomatoes radishes and green onions to the bowl and toss well. Serve immediately.
