Lisa made these delicious caramelized onion bites. This recipe is a keeper.

French Onion Puff Pastry Bites

  • 2 medium yellow onions, peeled and thinly sliced
  • 4 tablespoons unsalted butter
  • 1/2 cup white wine
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon Better Than Bouillon Beef Base
  • Salt and freshly ground black pepper
  • 2 sheets puff pastry
  • 8 ounces Gruyère cheese, grated
  • 1/2 cup crème fraiche
  • Thyme sprigs, for garnish

In a medium skillet, melt butter over medium heat. Add onions and sauté until softened. Lower the heat and continue cooking, stirring occasionally, until onions are golden brown and caramelized. Deglaze with white wine, stir in fresh thyme and the bouillon beef base. Taste and season with salt and pepper. Set aside to cool.

Preheat oven to 400 degrees.

Roll each sheet of puff pastry into a 6-inch x 8-inch rectangle and then cut into 2-inch x 2-inch squares. You will end up with 12 squares from each sheet, for a total of 24 squares. Gently push squares down into a nonstick mini muffin pan. Add a tablespoon of the caramelized onions to each, then top each with a generous mound of the Gruyère on top.

Bake for 16 minutes. Once cool enough to handle, remove from muffin tins to a serving platter, add a dollop of the crème fraiche to the center of each. Garnish with fresh thyme sprigs.

Hi Linda! These look great! Can they be served at room temp, or best served when still a bit warm?

Hi Amy! I think they are best a bit warm, but I had one after everyone left, which was at room temperature, and it was still delish!
