quick and easy appetizer #2
The second appetizer of the day for Thanksgiving is just as easy and quick as the first.
Hot Feta and Tomato Spread
16 ounces crumbled feta cheese
2 tablespoons, drained and chopped sun-dried tomatoes
5 plum (Roma) tomatoes, cut crosswise into thin slices
2 tablespoons olive oil
1 tablespoon plus 1 teaspoon finely chopped fresh oregano leaves
Freshly ground black pepper, to taste
Pita chips
Preheat broiler. Move the rack to the position closest to the broiler element or flame.
Spread feta evenly in a shallow 3 to 4-cup baking dish. Sprinkle feta with sun-dried tomatoes. Arrange thin plum tomato slices overlapping, on top. Drizzle oil over tomatoes and sprinkle with oregano and pepper. Place baking dish in the oven and broil until cheese is bubbling about 8 minutes.
Serve spread with pita chips.

Linda,
Thank you for including a “vegetarian” recipe section! You know I am always up for modifying a great recipe to make it “vegi.” Now I can go right to the vegetarian section for great ideas! Thanks!
Andrea, So happy you like the new listing, been meaning to do it for awhile and finally found the time. Happy New Year!
Again, Happy 5th Anniversary!
Can’t tell you how many times I’ve served this appetizer, everyone loves it!
