chowder
On the second day after Christmas, we had no food left in the house. OK, we had food, but nothing much to make for dinner. All I could scrounge up was the ham bone from HoneyBaked left from Christmas Eve. It had less than a cup of meat left on it.
What to do?
I dug around and found a package of diced pancetta with an expiration date of 12/29/12. Score!
I had a few potatoes, a bell pepper, a chunk of cheddar cheese, and some leftover mushrooms that would soon be going south. Hey, this might constitute a meal, after all!

recipe #3 – the soup
I’m sorry it took so long for me to get this soup posted. It makes great use of the delicious broth that was produced by making John Ash’s fantastic Ginger Chicken.
As much as I love soup, and you know I do, the real payoff from making that chicken was John’s outstanding sandwiches.
Hopefully you’ll find time to make all three recipes. The white meat I have leftover (after making the sandwiches and this soup) will be used to make THESE enchiladas.
Three great meals from 2 chickens, now that’s a good deal!

soup in Coronado
While Sheila and I are living it up here in Coronado, this healthy and hearty soup is served as our lunch one day and dinner the next. You do need to remember to soak the beans the night before, otherwise, it is pretty straightforward. Unlike yesterday, this time the photos nearly match how I describe to do it, nearly. I just had to use two baking dishes for the roasting of the vegetables, if you have a dish that is large enough, just use one.
If you have leftovers when reheating be certain to add a bit more water to thin out the soup. It thickens considerably as it cools.

more lentils
What’s that you say?
You loved the last lentil recipe so much that you want another?
OK, I can do that.
Let’s hear it for lentils!
- Lentils are very affordable.
- A one-cup serving of lentils contains just 230 calories.
- Lentils are rich in fiber, protein, and iron.
- Unlike most dried legumes, lentils do not require soaking before cooking and are ready in less than 30 minutes.
You could easily make this a vegetarian soup by using vegetable broth instead of chicken broth (or all water in place of the broth) and by omitting the chorizo – just be sure to spice it up. Add more smoked paprika, plus a 1/4 teaspoon of cayenne or red pepper flakes, and a dash of Sriracha or Tabasco sauce. potatoes everywhere
Here is soup number two from the big refrigerator clean-out.
Mixed Potato Soup
3 tablespoons olive oil
1 large onion, peeled and diced
1 large garlic clove, peeled and minced
1 jalapeno pepper, cored, seeded, and diced
3 pounds russet, sweet, and red potatoes
Salt and freshly ground black pepper
4 cups chicken broth
1 cup half-and-half
Add oil to a large pot over medium heat, until melted. Add the onions, garlic, and jalapeno and cook until the onions or soft and translucent, about 10 minutes.
Add the sweet potatoes and stir to combine. Add salt and pepper, to taste, and cover with a lid. Reduce the heat and let cook for 8 minutes without browning.

refrigerator clean-out
When classes ended on the last Friday of June, I still had a refrigerator full of vegetables and I was leaving town on Sunday. Summer squash, bell peppers, onions, shallots, garlic, tomatoes, jalapeno, eggplant, russet, red potatoes, and sweet potatoes. If you know me, you know what I made with all that – SOUP! The first, I am calling Rataouille Soup since it has all the makings of the classic Provencal dish. The second is a mixed potato soup, which I shall post tomorrow. It’s too hot for soup, so it all got packaged up and went into the freezer to await a cool spell. I know that won’t happen for another 4 months, but when it does, I will be ready!

summer’s super soup
Dave does not like cold soup. Something about it just seems wrong to him. Seriously?! I mean, it’s gazpacho, what’s not to like?!
- First off, it’s soup, for goodness sake. Soup = Love!
- It’s full of tomatoes. Tomatoes = Yum!
- It’s over 100 degrees outside: Cold Refreshing Soup = Smart!
- It’s called gazpacho = a Fantastic word to say, especially if you say it in your sexiest Antonio Banderas voice!
Obviously, I love gazpacho!
I made it for the last class of my series and brought home a container of leftovers. At dinner the next night, I made a bowl for myself and said to Dave, “I’m having gazpacho, would you like a bowl?”
“No, thanks”, he replied. I went about putting together our plates and as I was doing so, he suddenly noticed that there was shrimp topping my soup. “Oh, I’ve changed my mind, I’ll have a bowl”, he said.
Really? All it takes is a couple of little shrimp for you to change your bad attitude over cold soup? He ate the entire bowlful. Whatever men are exasperating!

cabbage soup
For day two of “Kim Week,” I am going to go where I have never gone before. I am going to make and then eat cabbage soup.
Yesterday I said that I trusted Kim’s taste 100%. That was put to the test when I discovered that not only did Kim’s cabbage soup contain, well – you know – cabbage, but also sauerkraut! I despise sauerkraut!!! Even the smell of it makes me sick, bringing back horrible childhood food memories.
I was over at Kim’s house yesterday morning, picking up more bounty from Kim’s friend, Chris, who has an urban farm in her backyard. Kim is working on setting up a tour for me! Can not wait!
Anyhow, Chris gave Kim a big bunch of carrots, nearly 3 dozen freshly laid eggs, and a bag full of limequats to give to me… oh my, I am over the moon with these generous and fun gifts.

Kim week
The remaining days of this weeks posts may end up all mentioning my beautiful friend and co-worker, Kim. And that would be a good thing, indeed! Last night Kim and I went out for a glass of wine, to catch up. Before leaving the house, I received a call from her asking if I could use some dill. Turns out her friend and neighbor has a garden and her dill runneth over. Of course, I’d love to have dill, or anything else from someone’s garden.
When Kim arrives to pick me up, she not only has a bag of dill but a huge head of purple cabbage too – look at that monster! Now, cabbage isn’t my favorite vegetable, I’ll eat it and I find it tolerable, but not on the top of my list. Not to worry, Kim has a recipe for a fabulous cabbage soup. OK, I trust her taste 100%, so I tell her to send me that cabbage soup recipe.
In the meantime, I used the dill to make a dill pesto as a garnish for a carrot soup that Dave and I enjoyed for dinner last night. I was so distracted by that head of cabbage, that I neglected to take a photo of the lovely pile of dill, but you’ll at least see it in the final product below. As for the cabbage… that story will be continued tomorrow.
