soup lovers

On the last day of classes each week, I ask the kids, “What was your favorite thing you ate this week, excluding desserts?” (I have to say, “excluding desserts” or all ten of the kids would rattle off one of 8 desserts we had made, trust me, I know – I was a kid once too and I’ve made the mistake before!) Six of the ten kids from last week said that the potato and bacon soup was their favorite dish.

Darn it, if I would have known that before, those six kids would have automatically been my teacher’s pets, because as you know… I Love Soup!

We made a couple of other soups too, and I’ll post those in the coming days, plus a few more of the pastas, cupcakes, and sweets – stay tuned…

final Easter recipe

This is my last chance to get up an Easter recipe. These potatoes will accompany our Pomegranate Molasses Lamb Chops.  I’m naming them double-smoked because of the delicious smoked Gouda and the ever-popular smoked paprika.  During cooking classes, last week at Les Gourmettes, our guest chef, Joanne Weir, needed to borrow a bottle of my smoked paprika and was shocked by how much I use… the bottle was nearly empty. I do love the stuff!

April Fool’s

When my kids were young, I loved to trick them with food on April Fool’s Day. The year Marissa was in fourth grade and Connor was in first grade was a stellar year! 

I started the day off with a non-food trick on my husband, Dave.  The day before, I took a new bar of soap and coated it on all sides with clear nail polish.  After it was dry, I replaced the soap in our shower with this new bar. I stood outside the bathroom and listened to him cursing as he continually dropped the bar of soap, trying to get a lather going.  He was so frustrated, that I actually began to feel sorry for him, and went in to replace the bar for him.

Well, while my posts have been all about cheese the last three days, we’ve been in the middle of a big-time cold spell and we’ve been having soup every single night! iLove!

I hope your Christmas was merry and bright! It was at the Hopkins’ house and I have a very good reason for not posting a recipe yesterday… it is pictured above. Santa brought me an iPad for Christmas and I’m having a blast with it! Thankfully it wasn’t opened until AFTER I had gotten Christmas Eve dinner and Christmas morning breakfast on the table, otherwise people may have gone hungry! Somehow, I did manage to make Christmas dinner, but the day after Christmas… it was all iPad, all day long! And I’m feeling the itch to get back to it right now. Before that happens, here is the potato dish I made for Christmas Eve to accompany pomegranate molasses lamb chops -yummers!

Black Friday Party

Who in the world would have a party the day after Thanksgiving, coming off of a cooking marathon? Me! Crazy, I know, but I am still really looking forward to seeing my friends at an impromptu get-together before the holiday rush. In fact, it’s sort of a kick-off to the madness of the Holiday Season, called a Black Friday Cocktail Party.

I’m making about half dozen appetizers and serving darling little splits of Freixenet Cordon Negro; the brut champagne in the little black bottles. Here is one of the dishes we’ll be slurping on, I’ll post more recipes and pictures tomorrow and for a few days to come. All will be more than appropriate for your own holiday party or to bring along to the ones you’ll be attending.

Happy Sunday

I have a thing for short ribs. In my opinion, they are the most flavorful cut of beef around and are so easy to prepare. Sear, braise, finish off, and serve. Very little actual hands-on time is required for so much goodness!  A happy Sunday, indeed.

room temperature

This is dinner #2 using the shredded chicken from the post two days ago. I like to serve this salad a little warm/a little cold, pretty much at room temperature. When you get home from work, running the kids around, the gym, whatever it is you’re racing in the door from; throw the potatoes in the pot.

Then change your clothes or get the kids set up with their homework, or whatever it is that needs to be done pronto. Then drain the potatoes and set them aside.

Next, in between doing all the things that get in the way of concentrating on making dinner, stop and make the vinaigrette and set it aside. And then when you’re ready to assemble it all; just slice the potatoes, and throw it all together in a bowl and dinner is on that table before you know it.

Please be sure to get one of those people, who always need to be fed, to set the table. I honestly hope you’re not doing that and making dinner, put those kids and husbands to work!

rellenos rule!

I just realized that this is the third rellenos (or stuffed poblano pepper) recipe on the site, and the 2nd in the past two weeks… but honestly, rellenos rule!  Here is what Wikipedia has to say on the subject:

“The chile relleno, literally “stuffed chile,” is a dish of Mexican cuisine that originated in the city of Puebla. It consists of a roasted fresh poblano pepper (a mild chili pepper named after the city of Puebla), sometimes substituted with non-traditional Hatch green chile, Anaheim, pasilla, or even jalapeño chili pepper. It is stuffed with melted cheese, such as queso Chihuahua or queso Oaxaca (traditionally), or picadillo meat made of diced pork, raisins, and nuts, seasoned with canella; covered in an egg batter or simply corn masa flour and fried…”

Here is what I have to say: “Fill a poblano with anything you like, skip the batter and frying! There is no way you can go wrong.”
