October, you forsake me
Each time I commit myself to get back in the blogging groove, something comes along and trips me up.
October, my birth month and historically my favorite month of the year, got off to a tragic start. My older brother, Dennis, passed away.
Dennis and I were close when we were young. When I say close, I mean that we’d alternately fight and get along, exactly like you’d expect siblings who are 18 months apart to fight and get along.
It was just the two of us for about 4 years, then Andy came along and a couple of years later, I finally got my baby sister, Sloane.
Dennis drifted in and out of our family and our lives but not before he left the world a beautiful legacy, his four amazing sons; Joel, Ben, David, and Jeremy. I adore my nephews. I was still in high school when Joel was born. He was my baby doll. Those cute little OshKosh B’Gosh boys are now 39, 37, 35, and 33 years old and live in and around Coeur d’Alene, ID.
Dad, Sloane, and I traveled to Idaho this past weekend to deliver Dennis’s ashes and belongings to his sons. Dad is in the photo above with my beloved sister-in-law, Teresa. Ben, David, Jeremy, and Joel (on the floor) are there, along with Dad’s great-grandkids; Joby, Kelton, Elijah, Aleea, and Dominic. Yes, Dennis most definitely left behind a beautiful legacy. Rest in peace, big brother. [Read more →]

cool and crisp
This refreshing salad is the perfect counterpoint and complement to the Spaghetti Squash Pad Thai – posted last week. It is best served cold from the refrigerator.
My family enjoys and can tolerate quite a bit of heat and spice in our food. I thinly slice the jalapeño pepper for this dish, but it can also be finely minced for those who like things toned down a bit. I give directions for both methods; you decide which suits your taste.
Prep the salad and the dressing hours ahead and then dress it just before you heat up the wok for the pad Thai and your meal will come together in a snap.

total eclipse of the potato
There is so much to talk about today!
First of all, do you want $100 in cash? For free? If so, you still have time to enter and a shot at winning it. Just leave a comment here and you’re in the Wednesday drawing. That’s all you have to do!
You can just say, “Hang in there baby, Monday’s almost over.” Or, “Hey Linda, I understand your life is in a state of change and flux but you really need to get back to posting recipes more often!” Or just, “Hi.” Anyhow, learn more about the Happy 8th Blogiversary Contest at this Link and leave a comment today.
Secondly, feast your eyes on this hilarious vintage-style oven mitt that my adorable friend, Lisa, gave me! She told me she had a prize for me (what I did to deserve a prize, I don’t know, but I need to figure it out so I can do it again and again!) I love it! Thank you, Lisa! xoxo. The oven mitt says so and it is true, below there is a new recipe that I’m droppin’ on y’all.
Lastly, have you heard that in just about 2 hours there is going to be a total eclipse of the sun? No one is talking about it, but it’s true! It’s all going down at 10:34 AM, Arizona Time. If you’re like me and don’t have eclipse glasses and have been too lazy to make a viewing box, set your timer and look out the window and see how dark it looks and say, “Well, that was cool.” and go about your day.
The boys all came over for dinner last night and I made yummy smashed new potatoes. When I was taking photos of the process, I inadvertently made my own little potato eclipse. Cool! No special glasses are needed to view this baby!

7 year old’s story
When I was in Chicago last month, I met up with two of my nieces, Megan and Amy, for dinner. Amy brought her son, my grand-nephew, Greyson. Grey, is seven years old and had just finished 1st grade.
(You may remember Greyson from THIS POST in October 2014)
The three of them were already seated when Lori and I arrived and Grey was sitting at the end of the table. I sat next to him and noticed that he had a paper and pen in hand and was working on something.
Lori was sweet enough to take a photo of the four of us. (Amy, Greyson, me, and Megan.)
Anyhow, I asked Greyson what he was doing and he said, “I’m writing a story.”
As we all chatted and caught up, Grey continued to put pen to paper and write his story. A while later he announced that he was done and asked if I would like to read it.
“Yes!”
He handed me the paper and I proceeded to read it out loud.
“Once upon a time there was a man.
One day the man went to a castle, he went in the castle something punched him. Aaaaa!
It was an invisible guy. The invisible guy cut the man’s hand off. The man found a hook, he put the hook on his hand. He ran out of the castle.
The invisible guy grabbed a bow and arrow and shot the man. AW! AW! AW! AW!
The man never went to the castle.”

7 years and 1 month old
Summer between 1st and 2nd grade
I have to say, I was impressed! He just turned seven a month before. Amy told us that he loved to write, so she had enrolled him in a summer creative writing class. What a fantastic and proactive mom she is!
I asked Greyson if I could keep it and he said that he wrote it for me. My heart melted. I asked if he would sign it for me. He said yes and asked if he could make all the letters in his name into pictures. I told him I’d love that, but asked if could he please sign his name on the front and sign it again on the back in pictures? He did and then he even wrote his name backward for me too.

Brandon’s Whiskey Lemonade
I am in Chicago this week helping my dear friend, Lori, pack up her Lake Shore Drive penthouse, in preparation for her move back to Arizona.
I came in a few days early so I could visit family before the pack-a-thon began. I first drove to my mother-in-law’s home in Rockton, Illinois, and spend the night with her. We played games, went out to eat, went to church, and had a lovely visit.
The next day, I was off to my brother and sister-in-law, Tom and Beth’s, home in Barrington to spend time with them. The three of us drove into Chicago on Sunday night for dinner with their two daughters, Katie and Maureen, and their beautiful families.
Our first stop was at Katie and Eddie’s home, where I had the pleasure and joy of meeting my newest grand-niece, 4-month-old Emily. While Emily napped, her big sister, Kody, who is almost three, entertained us in the backyard. By the way, the weather here has been glorious! What a relief after enduring the heat wave, including the 120-degree day, I left back in Arizona!
Next, we jumped into our cars and headed downtown to Mo (new mamma to be!) and Brandon’s loft condo. My other brother-in-law, Roger, joined us there.
Here is Roger giving baby Emily her bottle, so sweet!
Brandon, a YouTube-Self-Taught craftsman has been transforming their space. He bought himself a circular saw and went to work crafting barn doors, along with kitchen and bath cabinets, like a pro. Seriously amazing!
The other amazing thing was the signature cocktail Brandon served us.
He found the recipe HERE. Brandon had visited the High West Distillery in Park City and brought home a bottle of their spiced syrup. The syrup is what makes the cocktail so special. How very generous the folk at High West are to share the recipe to make the syrup at home. Enjoy!

Father’s Day cake
I made this cake for Father’s Day. Isn’t it lovely?
But, as usual, I had a problem while baking. Seriously, what’s new?
This time around, I took extra precautions and not only greased the pans but also lined them with parchment rounds and floured the sides. I was sure that everything else would work out perfectly. Nope.
The original recipe, which I am not going to reference here because there were too many problems with it, did not indicate the diameter of pans to use. Much of my bakeware is packed away. I had two 8-inch diameter pans and three 9-inch diameter pans at my disposal, so I decided to go with the 9-inch. That was a mistake numero uno. Since I wasn’t sure of the pan size, I should have checked the cakes much earlier than I did to see if they were cooked through. As it was, the original recipe called for the cake layers to be baked for 35 minutes. I checked them after 24 minutes and they were already overcooked and dry as the Sonoran desert.
Mistake numero dos was to not then soak them with some sort of orange liqueur or orange juice. I’m certain that would have helped. Instead, I figured that the frosting (there is a lot of it!) would be enough to compensate for the dryness. Again, no.
It’s a pretty cake and if you keep an eye on it while it’s baking, I’m sure it’s a delicious cake too. I served up the 5 pieces to my dad, Connor, Dave, Sloane, and myself and then I tossed the rest of it in the trash (after I picked all the fruit off the top and had that with my breakfast the next morning). I believe I’ve made the corrections and compensations for this to be a tasty cake. If you decide to give it a try – let me know.
In the meantime, let me say, this is just another example of why …
I Hate To BAKE

easy peasy lemon squeezy
This is the pie I made my dad for his 86th birthday. It turns out, also for his 85th birthday. See the NOTE at bottom of the post. What can I say? It’s easy, it’s quick and it’s delicious!
It was made even easier when Connor spent the night before and he readied the pie crust for me. He is a master at lining a pie pan with dough, crimping, and blind baking it. Seriously, look at that! Pure Perfection!

not fried chicken
This is the chicken that we enjoyed while my dad and Dave ate liver at Dad’s birthday dinner.
One note, in my hurry to get dinner on the table and while busily making the gravy, I left out the last step of boiling the chicken pieces to get them browned. As a result, the chicken I served looked a little anemic. It still tasted good and it was crispy but quite bland in color. Oops.
Since the last thing I want you to see as the lead photo on a post is anemic chicken, I made it again last night and did it right. That is what you see above. Below is the not-so-pretty, but still tasty, stuff.

NYC with my girl
I returned on Monday night, after a glorious long weekend in New York City with Marissa. We hadn’t had a mother/daughter trip since we went to Paris and London, the summer after her freshman year in college.
We had the best time!
The first morning, we went to LIVE with Kelly, where we saw Mandy Patinkin, Rashida Jones, Jason Statham. Kelly’s charming and fun co-host for the week was Scott Wolf. Plus we were able to give high-fives to James Bond himself, Pierce Bronsan!
Kelly Ripa was adorable and everything you hope she would be; funny, quick-witted, beautiful, and sweet to everyone on set and in the audience.
We were actually there for two shows. The live show on Thursday, when we sat in the front row. And again about an hour later for the taping of the Friday show, where we were up in the balcony. Both vantage points had their advantages. It was fun to be in the front, but there were often production crew and cameras blocking our view. It was great to be up high because we could easily see it all.

Plan B
On Sunday morning, I pulled a package of pork tenderloin from the freezer to thaw for dinner. A few hours later I heard from Connor and he decided to stay home instead of coming over as he usually does for Sunday dinner and to do his laundry. I think he’d had enough of me after our trip to Austin.
