cranberry pinwheels

These pinwheels are an adorable, festive, and savory appetizer fit for any holiday table. When I made them for the Christmas Craft Party, I wasn’t able to find the lovely green spinach tortillas. I hope you will search them out if you whip this up for Christmas, the mix of green and white tortillas makes for a lovely presentation.

Cranberry Feta Pinwheels

8-ounce package cream cheese, room temperature
1 cup crumbled feta cheese
1 cup dried sweetened cranberries, also known as craisins
1/4 cup chopped green onion
2 tablespoons minced fresh chives
1 tablespoon fresh thyme leaves
1/2 cup pepper jelly, divided
4 large wheat tortillas and 4 large spinach tortillas

In a medium bowl, mix together the cream cheese and feta cheese until well combined. Stir in the cranberries, green onions, chives, thyme leaves, and 1 tablespoon of pepper jelly.

Divide and spread the cheese mixture evenly among the 8 tortillas.

Top each with a scant tablespoon of pepper jelly and spread over the cheese.

Roll each up tightly, wrap in plastic, and refrigerate for at least one hour.

To serve, cut each into 6 to 8 slices and place on a platter. Cover and refrigerate until ready to serve.

Update: Not much to report. I have yet to add more bling to the walker. I was way too busy yesterday …

1. Falling in the shower. Yep! As I hit the floor, all I could think was, “You have got to be kidding me!!!”  I somehow managed to get my sorry butt up – well, onto my hands and knees, open the shower door, and pull myself up with my trusty walker. Aside from increasing the size of the already huge nasty bruise on my left thigh, no additional damage was done, except to my pride, which is seriously injured.

2. The next order of business was a photo shoot with the Arizona Republic Food Section for an upcoming article all about people and their cookbooks. You KNOW I am more than qualified to be the cover girl for that!

3. More BFF Peggy time as we decorated three more areas of the house; the top of the entertainment center that holds a TV, a high decorative shelf-sort-of -thing in the kitchen, and this awesome cart in my backyard. The photo link is from last year. But thanks to Peggy, I think it looks even better this year.

4. Dave returned home late last night, so now at least if I fall in the shower again, there will be someone here to hear and heed my cries for help!
