Wishing you a Blessed and Happy Easter

Happy Easter to you and yours. I’m throwing out one last recipe, just in case you still have to make something super easy and SUPER-DUPER cute! Usually, I would have already had my table all set to show you my tablescape, but since we are eating outside and it’s been windy and dusty all week… I have not done it ahead. Instead, above you can see the pile of dishes I plan to use and a mock-up of a place setting at the bottom of the post.  I hope you enjoy this beautiful day!

Smoked Salmon Spread

3 ounces cream cheese, softened
2 tablespoons butter or margarine, softened
6 ounces smoked salmon
1/2 teaspoon Sriracha sauce
1 teaspoon lemon juice
2 tablespoons peeled coarsely chopped shallots
Zest of 1 lemon

Garnish: green onion tops or chives and Pepperidge Farms Golden Butter crackers (butterfly-shaped)

Place the cream cheese and butter in the bowl of a food processor and blend until smooth.  Add the salmon, Sriracha, lemon juice, and shallots and pulse until well blended, but not smooth.

Scrape into a bowl and stir in the lemon zest.

Spoon into egg cups.  Break butterfly crackers in half and stick them into the mixture. Garnish with 2 small chives, as the antennas and serve with additional crackers on the side.

Serves 6
